Bacon Wrapped Pork Tenderloin

Ingredients:
  • 2 each Pork tenderloin (cut into 4 portions
  • 4 cloves Garlic
  • 1 large Shallot
  • 1 tbsp. Rosemary - finely chopped
  • 1 tbsp Cilantro - finely chopped
  • 1 tbsp McHardy's Original Seasoning
  • 2 oz. Extra virgin olive oil
  • 8 slices Applewood smoked bacon
  • 8 oz. McHardy's Sweet Garlic Chili Sauce

Ready in: 50m

  1. Preheat oven to 275 degrees.

  2. Place pork tenderloin portions, garlic, shallots, rosemary, cilantro, McHardy’s Original Seasoning and oil into a mixing bowl and mix together until the pork tenderloin is evenly coated.

  3. Tightly wrap 2 slices of the bacon around each portion of pork tenderloin to completely cover leaving the cut ends exposed.

  4. Heat a skillet over medium high heat and place the bacon wrapped pork tenderloin portions with the end of the bacon facing down into the skillet. Let the bacon cook until almost crisp and turn the portions 1/3 of the way to cook the next side of the bacon.

  5. Repeat one more time and when the bacon is cooked all around, place the skillet into the preheated oven and finish cooking for around 15 – 20 minutes or until the internal temperature is 145 degrees.  (This will achieve a medium to medium well done temperature. Cook to 155 degrees for well done if you prefer)

  6. Remove the skillet from the oven and let rest for 5 minutes.

  7. Slice each portion into ¼ inch slices, arrange on plate and spoon 2 oz. of McHardy’s Sweet Garlic Chili Sauce over each portion serve with your favorite side dishes made with McHardy’s Seasonings and Sauces.
